What’s the best type of cheese?

or if you were earnestly looking for a dairy variety, uh…lots? Depends on the rest of the context of the meal. I like goat cheeses a lot, there’s a chipotle rubbed toscano at work right now that’s divine, and if I could get the baked lemon ricotta we sell in December year round it would be real bad for my waistline.
